(2) Preparation of sterile air in beer fermenter
The management of aseptic air filtration system must be strengthened because the improper treatment of aseptic air filtration will affect the microorganism control in the production of pure draft beer.The preparation process of sterile air is as follows:
Compressed air, oil removal, water and miscellaneous particles, pre-filter, sterilizing filter, key station sterilizing filter, sterile air
Aseptic air microbial control index: total number of bacteria ≤3 /10 minutes, yeast 0 /10 minutes, anaerobic bacteria 0 /10 minutes.
(3) Preparation of sterile CO2
In the process of beer brewing, CO2 is needed for the addition of sake CO2, the preparation of deoxidized water and the back pressure of the sake tank.In the production of pure draft beer, CO2 should also be aseptic, the CO2 recovery pipeline should also be cleaned regularly by CIP, and the gas sterilizing filter should be steam sterilized before each use.The preparation process of sterile CO2 is as follows:
CO2 liquefied storage tank → heating gasification → pre-filter → sterilizing filter → separating gas point sterilizing filter → aseptic CO2 Bacterial control index: total number of bacteria ≤3 /10 minutes, yeast 0 /10 minutes, anaerobic bacteria 0 /10 minutes.
